Copycat P.F. Chang's Green Beans



These are about the best green beans I ever ate!  They are fresh tasting, spicy, and garlicky.  Why, even Rudy will eat them and he has an aversion to green vegetables.

Crazy-Good Asian Salad and Dressing

OMG!  Every time I find a great salad recipe, I think, "This is the best!"  The only, only reason this recipe doesn't get that designation is because of the prep time.

With recipes that take a lot of preparation, I usually work at them over a couple days.  You'll understand this more as you get older!  Lol!

I usually cut my recipes in half for just Rudy and me.  If we were to eat this full head of cabbage before the salad spoiled, we'd be spending half our time in the bathroom!

You'll notice that most of my vegetables are chopped in nice, consistent little squares with my indispensable Vidalia chopper.  The reason is two-fold; (1) I've always been a bit of a perfectionist when making things and (2) it's a REAL time saver.

The Perfect Banana Muffin

We rarely eat stuff like this but I just happened to have three very ripe bananas that I needed to do something with quickly.  I was amazed at how fast and easily this recipe came together.  I added raw chopped walnuts.  Some recipes say to toast your nuts first -- LOL -- but I prefer to use them raw.  These muffins are really delicious and may even be better the next day, the reason being that their already made!  Now I know why the recipe is called, "The Perfect Banana Muffin."
